Thursday Kiddie Cocktail Hour – Mango Coconut "Milkshake"

By popular request, this is a mango coconut drink I made for one of my seven course meals a few years ago.

  • 2 cups (1 can) coconut milk
  • 1/2 teaspoon ground cardamom
  • 4 cups mango chunks (can be frozen for a milkshake-like treat)

In a blender, combine coconut milk, cardamom, and mango chunks and process until smooth. Makes 2-4 servings, depending on the size of your glasses.
